My uncle gave me 3 gallons of ice cream and everytime I take out the ice cream, it gets to a point where it’s hard to scoop out. Any tips?

Or, transfer it into the refrigerator 1 hours before serving.
every time my ice cream gets hard i put it in the microwave for about 30 seconds then it gets soft
