Make a custard with Egg yolks, sugar and milk, cool to room temperature and then beat in cream then your flavours, or if you want pieces of things in it (raisins, chocolate chips, cookie etc you mix them in when it’s half frozen. If you don’t have an icecream maker then flavours with alcohol like rum/raisin are good because they set differently but if you just make plain icecream without an icecream maker then open up the freezer and stir every hour or so until it’s set.

Ice cream is (basically) cream, milk, sugar and vanilla. Other flavors are added to this.
Basic recipe:
1 cup milk
2 cups cream
3/4 cups sugar (dissolve in the milk so it’s not grainy)
1 tsp vanilla
You need to mix it as it’s freezing, which means keeping the temp on the outside of the mixing bowl below freezing. That’s why people use ice cream makers. It holds ice on the outside of the bowl. Newer ones use a frozen liquid inside the WALLS of the bowl and a motor turns it. But you could do it by hand. Just make sure you keep it cold or the ice cream won’t freeze.
You can melt chocolate chips with the milk and sugar or put chopped fruit in it. You could also substitute plain yogurt for the milk and cream. The basics are there, the rest is up to you and it’s fun to experiment.
